Healthy Summer Side Dish

Hi all! It has been wayyyy too long since I shared a recipe on the blog. Now that the weather is FINALLY warming up, we can prepare our decks and patios for some serious outdoor time – grilling required.

Warmer days call for lighter and healthy dishes because let’s face it, less clothing is necessary. I try to make a home cooked meal 3-4 days a week, other days we can do left overs or take out. During the Spring and Summer months, throwing steak or chicken on the grill is easy, but what to serve alongside our main dish is always up for debate. I find myself constantly searching for side dishes to keep the meal interesting.

The recipe today is from Damn Delicious and is the perfect side dish to accompany a protein of your choice. If you have never heard of the Damn Delicious blog, it’s run by Chungah, the cutest food blogger living in LA. She has great recipes that are simple yet look impressive.

For me, this Parmesan Zucchini and Corn dish was a great meal to food prep my lunches for the week! I served mine with a healthy dash of red pepper alongside some grilled chicken and brown rice. It’s easy to make ahead, so you can make a batch on Sunday and use it as a side dish later in the week. Click HERE for the recipe.
